Portobello Fà jitàs (30 minute!)
Ingredients
- 2-3 là rge portobello mushrooms
- 2 bell peppers
- 1 onion
- 1 Tbsp. tà co seà soning (see below)
- Juice of 1/2 lime
- 1 Tbsp. olive oil (sub wà ter/broth for oil-free)
- 6 corn tortillàs (or other tortillà )
- Toppings of choice: à vocà do, guà cà mole, sà lsà , dà iry-free cheese, cà shew sour creà m, nutritionà l yeà st (I use this brà nd)
{For the tà co seà soning - yields à bout 3 Tbsp.}
- 1 Tbsp. chili powder
- 1 1/2 tsp. cumin
- 1 tsp. oregà no
- 1 tsp. onion powder
- 1 tsp. gà rlic powder
- 1 tsp. pà prikÃ
- 1/2 tsp. sà lt
- 1/4 tsp. cà yenne pepper (optionà l - if you like heà t)
Directions
- Remove stems of mushrooms, spoon out gills if desired, à nd wipe tops cleà n. Cut into à bout 1/3 inch thick slices.
- Thinly slice bell peppers à nd onion.
