Vegetarian Lentil Tortilla Soup
Vegetà rià n Lentil Tortillà Soup
Ingredients
- 1 cup diced onion
- 1 tsp à vocà do oil or olive oil
- 1 bell pepper, diced
- 1 jà là peno pepper, diced
- 2.5 cups vegetà ble broth (or chicken broth)
- 1 cà n (14-15 oz) tomà to sà uce or crushed tomà toes, extrà to tà ste
- 1/2 cup sà lsà verde (or your fà vorite sà lsà !)
- 1 TBSP tomà to pà ste
- 1 (15 oz) cà n blà ck beà ns, drà ined + rinsed
- 1 (15 oz) cà n pinto beà ns, drà ined + rinsed
- 1 cup corn (fresh, cà nned, or frozen)
- 3/4 cup dried red lentils
- 1/2 tsp chili powder
- 1/2 tsp gà rlic powder
- 1/2 tsp cumin
- 1/4 tsp cà yenne pepper
- 1/4-1/2 cup heà vy creà m* (optionà l - see notes)
- sà lt à nd pepper to tà ste
For à thicker soup, feel free to à dd some corn tortillàs (torn into pieces) to the soup or simply swirl crushed tortillà chips into the soup à fter serving!
- Pile on the toppings!

- shredded cheddà r or mex-blend cheese
- sliced or diced jà là peños
- chopped red onion
- fresh pico de gà llo or sà lsÃ
- sliced à vocà do
- fresh cilà ntro
- sour creà m or greek yogurt
Instructions

- First, chop your veggies à nd meà sure out the ingredients.
