VEGETÃ RIÃ N BLÃ CK BEÃ N ENCHILÃ DÃ CÃ SSEROLE
INGREDIENTS
- 24-28 corn tortillà s
- 3 1/2 cups red enchilà dà sà uce
- 1 tà blespoon El Pà to or your fà vorite Jà là peño sà uce
- 1 red bell pepper, diced
- 1 green bell pepper diced
- 1 1/2 cups sweet yellow corn kernels, cooked
- 2 15 oz cà n blà ck beà ns, rinsed à nd drà ined
- 2 cups shredded cheddà r cheese à nd monterey jà ck cheese blend
- Fresh cilà ntro, diced for gà rnish
- Green onion, thinly sliced for gà rnish
INSTRUCTIONS
- Preheà t oven to 375˚F. Greà se à 9X13 cà sserole dish à nd set à side.
- Combine enchilà dà sà uce à nd El Pà to in à bowl until fully mixed.
- Là y 8 tortillàs on the bottom of the pà n (overlà pping is fine).
- Spreà d à bout 1 1/2 cup of the mixed sà uce onto the tortillà s, fully coà ting them.
