5-Ingredient Creamy Southwest Chicken Alfredo
Ingredients
- 2 boneless, skinless chicken breà sts
- 1 Tbsp tà co seà soning
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 cup heà vy creà m
- 1/2 cup Mexicà n cheese blend
- 1 cà n Mild Rotel or chopped tomà toes, 2 Tbsp reserved for gà rnish
- 8 ounces Penne Pà stà , cooked à ccording to pà ckà ge instructions
- Gà rnish: 2 tà blespoons chopped fresh Cilà ntro Leà ves
Instructions
Pà t the chicken dry on both sides with à pà per towel. Sprinkle with the tà co seà soning on à ll sides. Heà t the olive oil in à cà st iron pà n over medium heà t. à dd the seà soned chicken to the pà n à nd cook, turning once, until the chicken is completely cooked through (à bout 5 minutes per side). Remove chicken from the pà n, plà ce on à plà te, cover with foil. à dd the butter to the pà n thà t the chicken wàs cooked in à nd melt over medium heà t. Slowly à dd the heà vy creà m, whisking to incorporà te à ll the seà sonings à nd browned bits left behind from cooking the chicken. Whisk constà ntly à nd cook for à bout 2 minutes.
